Ingredients

  • 1 cup Quinoa
  • 1 large Cucumber
  • 1 pint Cherry Tomatoes
  • 0.5 medium Red Onion
  • 0.5 cup Feta Cheese
  • 0.5 cup Kalamata Olives
  • 2 tbsp Lemon Juice
  • 3 tbsp Olive Oil

Instructions

Cook quinoa according to package directions. Let cool.

Chop cucumber, halve cherry tomatoes, and thinly slice red onion.

In a large bowl, combine cooled quinoa, vegetables, feta, and olives.

In a small bowl, whisk together lemon juice and olive oil. Pour over salad and toss to combine.
