Ingredients
- ✓1 cup Brown Lentils
- ✓2 Carrots
- ✓2 stalks Celery
- ✓1 Onion
- ✓6 cups Vegetable Broth
- ✓1 14.5 oz can Canned Diced Tomatoes
Instructions

Rinse lentils. Chop carrots, celery, and onion.

In a large pot, heat 1 tbsp of olive oil over medium heat.

Add chopped vegetables and cook until softened, about 5 minutes.

Add lentils, vegetable broth, and diced tomatoes.

Bring to a boil, then reduce heat and simmer for 40-45 minutes, or until lentils are tender.
